Lasagna Soup

6 Freestyle Smart Points per serving. Makes 5 servings.

Lasagna is my all time favorite food but it takes forever and has a million points. This lasagna soup gives you all that yummy Italian flavors that is Weight Watchers friendly for only 6 Freestyle Smart Points! Head over to my YouTube channel for a fun cook with me!

Instant Pot

Food scale

Ingredients:

For the soup:

Cooking spray

1 lb. 99% lean ground turkey

1 medium onion

1 tbsp. minced garlic

2 tbsp. parsley (fresh or dried)

2 tbsp. basil (fresh or dried)

3 cups low sodium, fat-free chicken broth

2 1/2 cups water

2 cups marinara sauce (I used 0 point Skinny Taste sauce)

2 bay leaves

6 oz. broken lasagna noodles

For the topping:

1 1/4 cups fat free mozzarella cheese

2.5 cups low fat cottage or ricotta cheese

3 tbsp. Parmesan cheese

2 tbsp. basil

Directions:

Press saute on the Instant Pot and spray with oil. Add the ground turkey and cook until browned, breaking it up as it cooks with a wooden spoon or spatula about 4 to 5 minutes.

Add the chopped onion and crushed garlic and cook 2 to 3 minutes. Press cancel to shut off.

Add the parsley, basil, broth, water, marinara sauce, bay leaves, and fresh black pepper; cover and cook high pressure 15 minutes.

Use the natural or the quick release method, then open the pot. Add the broken pasta, cover and cook high pressure 3 minutes. Use the quick release method to open the pot.

Divide between 5 bowls and top each with 1/2 cup cottage cheese (or 113 g on food scale), mozzarella, and fresh basil on top.
