Weight Watchers Broccoli Cheese Soup

3 Freestyle Smart Points per serving. Makes 10 servings.

Tools used:

Instant Pot

Immersion blender

Ingredients:

1 medium onion

2 stocks of broccoli

2 cubed russet potatoes

1 tbsp. minced garlic

4 cups chicken or vegetable broth

1 10.5 oz. can of cream of chicken soup

10 oz. Velveeta reduced fat cheese product

1 can of Rotel

¼ tsp black pepper

½ tsp cayenne pepper

Instructions:

Spray skillet with non-stick spay. Sauté onion and garlic until translucent (about 3 minutes).

Add onions, garlic, broth, cream of chicken soup, potatoes to Instant Pot. Cook under manual pressure for 10 minutes.

While the potatoes are cooking cut up the broccoli. After potatoes are done, change Instant Pot setting to slow cooker mode and add broccoli, rotel (not drained), black pepper & cayenne pepper for about 4 hours.

With about 20 minutes remaining use the immersion blender to puree in pot. You can puree it smooth or leave some small chunks for texture depending on your preference.

Cube the Velveeta cheese and add to the pot. Let sit for the remaining 20 minutes and mix until cheese is melted.
